A chewy homemade M&M cookie is the base for this M&M Ice Cream Sandwich that will become a favourite easy dessert kids and adults will love in hot weather!
What tastier way to cool off than with an M&M Cookie Ice Cream Sandwich? Between the soft, chewy cookie with crunchy and chocolate-y goodness of the M&Ms and the cooling, refreshing ice cream flavour you choose it's a treat that is enjoyed all summer long.
It's so easy to put this tasty treat together too and bonus you can make some extra M&M cookies to munch on in between the M&M cookie ice cream sandwich or save them for another day's treat. 
Everyone will enjoy making and eating these M&M Cookie Ice Cream sandwiches and imagine the fun you and the kiddos can have deciding what flavour ice cream you want to have in between your delicious M&M Cookies? I love them with plain ole vanilla (which is really not plain) but also enjoy them with chocolate ice cream and a maple praline has been darn tasty too!

I have to admit I like these M&M Cookie Sandwiches a little more than I should, my waistline is not always as grateful about them as my tastebuds are. Who can resist the chewy goodness combined with their favourite ice cream flavour, apparently not me! My teen-aged daughter enjoys them too and she's tried them with her favourite peanut butter ice cream and another one with caramel and toffee, oh my!

I love ice cream sandwiches, but there are none out there that are dairy free and gluten free. So, I will have to make my own to get them. I think I could make this successfully with variations. Sure looks good!

YOU just gave me the best ideal! My great niece almost 3 loves ice creams and cookies. BUT I have leaned that smaller is better with her with food/drink that could be messy. If I made these cookies almost like a vanilla wafer an then added the ice cream. She could eat the smaller size before they melted.
